Good Gravy?

I've been having trouble lately getting gravy right. It' either too thin or by the time I take it out for leftovers, it gives jello a run for it's money! I've been using Corn Starch for a while. Any other GF/CF thickeners out there?

For gravy we use potato flour with cornflour
about 3 parts cornflour to one part potato flour

Also, depending on what type of flours you have around... tapioca does not work well for gravy. I have used rice flour with success.

I use a cornstarch/rice flour mix, three parts rice flour to one part rice flour.
