GAPS / SCD Legal Gumbo

Take 1 head of celery, remove root and leaves and chop celery into small slices.
Take 1/2 cup of ghee and put in a large pot over medium heat.
Saute celery in ghee occasionally stirring and turning.
While celery is sauteing, take 1 large white onion and 2 bell peppers(seeds removed) and chop.
Saute celery, onions and peppers in same pot until tender. If you need to add additional ghee to prevent burning, do it now.
Optional: Add 1 large jalapeno sliced into rings with seeds removed.
Optional: You can add a cup or 2 of okra, but it is not SCD / GAPS legal, so we leave it out.
After celery, onions and peppers are quite tender, you can now add meat.
Add 1 pound of either uncured SCD / GAPS legal kielbasa sausage or andoulle sausage. I like the Whole Foods andoulle sausage, but will also use the Wellshire Farms kielbasa. Both appear to be somewhat GAPS / SCD legal.
Optional: Add 2-3 chicken breasts.
Once sausage and chicken breast are brown, then add 1 pound of peeled shrimp without tails. I prefer small frozen 71-90pc/lb shrimp that have been thawed. Sautee shrimp with mixture until they start to turn pink.
Add 2 tsp black pepper, or to taste.
Optional: Add 1-3 tsp of cayenne pepper or to taste.
Once shrimp start to turn pink, add 1 1/2 quarts of chicken broth.
Bring broth to boil. Once it starts to boil, turn heat to low, cover and simmer.
Allow to simmer for a while before eating.
Optional: Just before serving add Gumbo Filet to thicken. A little goes a long way. You can find it in the spice aisle. Zatarains makes it. It is good without it.
Serve with either rice (not legal) or "riced cauliflower" that has been microwave roasted (GAPS / SCD legal).
